Clean (and Flavor-Packed!) Sundried Tomato Pesto
I'm sure I sound like a broken record when I say that healthy eating doesn't have to be bland and boring, nor should it be repetitive.
The same old chicken breast, kale, and sweet potato week after week? Come on. We can do better than that.
I try really hard to provide participants in my 21 day clean eating and exercise program with delicious options to keep their taste buds interested throughout their three weeks with me, and even beyond—many of us have made this way of eating into a semi-permanent lifestyle.
This recipe is made with clean (all-natural) ingredients, and it's so flavorful that you only need a little. Enjoy!
CLEAN (AND FLAVOR-PACKED!) SUNDRIED TOMATO PESTO
7 sundried tomatoes, soaked in hot water to soften (get the dried kind, not the kind soaking in oil)
1/4 c almonds
1/2 Tbsp capers
1 clove garlic
1/4 bunch basil, chopped
1/2 Tbsp rosemary
1/4 tsp paprika
Pinch of S+P
6 Tbsp olive oil
2 Tbsp balsamic vinegar
1/2 Tbsp maple syrup
Before draining the sundried tomatoes, reserve 1/4 c of the soaking liquid. Place all ingredients in food processor, along with soaking liquid, and process until smooth.
