Clean Sloppy Joe Recipe


I have fond memories of sloppy joes from my childhood—they were made with a powdered seasoning packet, and the oil from the meat pooled to the top of the mixture if you went too long without stirring it.

I doubt I would like that sloppy joe if I ate it today. But I love this healthy recipe, which lets me reminisce with the flavors of childhood while providing my body with high-quality fuel.

The whole wheat buns are a treat; if you're looking for a more nutrient-dense option, you could serve the meat mixture over a whole grain such as barley or brown rice.

For best results, serve with a salad or large serving of veggies of your choice, and fruit for dessert.

CLEAN SLOPPY JOES

4 tsp olive oil

1 onion, chopped

4 cloves garlic, minced

2 carrots, shredded

1 red bell pepper, diced

2 lb ground turkey

2 tomatoes, diced

2 Tbsp tomato paste

1/2 c chicken broth

2 Tbsp Worcestershire sauce (optional)

1 tsp chili powder

1 Tbsp honey

8 whole wheat buns

Heat a large skillet over medium heat. Add oil, onion, garlic, and carrots and cook for 2-3 minutes. Add bell pepper and turkey, crumbling turkey as it cooks. Add tomatoes, paste, broth, Worcestershire sauce, chili powder, and honey. Add salt and pepper to taste. Bring to a low simmer, cover, and cook for 5 minutes. Spoon mixture into buns.
