Salsa Verde That's Worth Eating


Have you ever bought salsa verde in a jar at the grocery store? It looks so delicious, spicy and tangy...and then you put it on your taco and you can't even taste it?

That won't happen if you use fresh, flavor-packed ingredients. I know it's a bit more work, but in my experience, fresh, homemade sauces are one of the best ways to make sure my taste buds stay entertained when eating healthy food. There's no need to overwhelm my senses with super salty or sweet foods when I've got a fresh salsa like this!

I find that when it comes to homemade sauces, having a few simple recipes under my belt makes me feel prepared... and the mental game is half the battle. So here's one for your arsenal... Enjoy!

SALSA VERDE THAT'S WORTH EATING

1/4 c olive oil

Juice of 1/2 lemon

2 Tbsp white wine vinegar

1/2 c chopped parsley leaves (flat or curly, either is fine)

1 c chopped cilantro leaves

4 cloves garlic

2 scallions, chopped

1 tsp herbs de Provence

1/4 tsp sea salt

1/4 tsp black pepper (fresh ground is best)

Dash of cayenne pepper (optional)

Place all ingredients in food processor and process until well blended.

Note: this is 21 Day Fix compliant; just count it with your orange container!
