Delicate Flavors, Tastes of Summer

It's always surprising to me just how little additional flavoring is necessary with fresh, seasonal produce. Just combine it together and let the tastes of the season shine through.

This is what was for dinner the other night. Simple and delicious so I thought I would share!

SUMMER VEGGIE STIR FRY

1 c quinoa

1 Tbsp olive oil

2 garlic cloves, chopped or pressed

1 onion, chopped

Summer squash or zucchini - 3 small or 2 large

1 pkg frozen lima beans, thawed

4 ears sweet corn, kernels removed

1 tsp dried oregano

Cook quinoa according to package directions. While it is cooking, heat a large skillet or wok over medium heat. Add olive oil; once oil is hot, add garlic and onion. Saute until onions are translucent, then add squash/zucchini, lima beans, and corn kernels. Season with oregano, salt, and pepper. Cook until all ingredients are warmed through, stirring frequently. Serve over cooked quinoa.
