Crockpot Pulled Pork with Cumin, Cilantro, Garlic, and Citrus


We've all had that to-die-for pulled pork at a restaurant... Super tender and infused with the flavor of garlic and citrus. But did you know that it's super easy to do yourself at home?? Pop a pork roast in the slow cooker with some seasonings. Set it and forget it! This is one of my absolute favorite recipes.

CROCKPOT PULLED PORK WITH CUMIN, CILANTRO, GARLIC, AND CITRUS

2 lb pork shoulder roast

4 cloves garlic, minced or pressed

Juice of 2 oranges

Juice of 2 limes

2 tsp cumin

1 bunch cilantro, choppped

  1. Season pork with salt and pepper.

  2. On the stovetop, heat a large pot over medium-high heat and add 4 tsp grapeseed oil. When oil is hot, add the pork and sear on all sides. (This step is optional, but I do find that it makes the flavor of the meat pop more. You can even find crockpots that will allow you to brown on the stovetop, then slow cook in the heating unit, within the same container!)

  3. Place browned roast in the slow cooker.

  4. In a small bowl, combine garlic, orange juice, lime juice, and cumin.

  5. Pour this mixture over the top of the roast.

  6. Place the chopped cilantro on top.

  7. Cook for 8-9 hours on low or 4-5 hours on high.

  8. Once cooking time is over, shut off slow cooker and open the lid to allow the heat to dissipate for a few minutes.

  9. Using a fork, shred the pork within the slow cooker. Careful—it will be hot!

  10. Use a fork or slotted spoon to remove the shredded pork to a serving plate.

Makes 4 servings. 21 Day Fix container counts per serving: 2 red, 1 teaspoon.

Serving suggestion: serve with 1 lb sweet potatoes (cubed, tossed with 4 tsp olive oil, salt and pepper, and roasted for 30 minutes at 400ºF) and 4 green bell peppers (cut into strips and pan seared in 4 tsp olive oil with black pepper and lime zest). Adds 2 yellow, 1 green, and 2 teaspoons per serving to the container counts.
